December Progress Report

Season’s Greetings!

We hope everyone has enjoyed keeping up with all of the exciting things going on!

Our brewing equipment is being cleaned as we speak, we can already hear the kettles brewing and making that delicious wort.  The kitchen hood and specialty wall coverings have been completed, it’s like the white walls are asking to be have schnitzel gravy thrown across them.  Can anyone say pretzel? Our craftsman, Will, has been busy building the bar and making sure it’s leveled and ready for guests with their full glasses of beer.  Tomorrow, our walk-in refrigerator and freezer are assembled, but with this weather, I’m not sure anyone will be able to tell the difference!

Decor elements are also in the works.  Two hanging pergolas have been cut and hung, it’s dark walnut color will help us to create the beautiful indoor beer garden feeling and ambiance that we are trying to achieve.

Now, about this food business. It’s pickling week! Donnie is testing sauerkraut and other tangy vegetables that will be on the menu.  Next up is herbed toasted spaetzle, potato pancakes with creme fraiche and applesauce, and grain mustard brick chicken.  We will loosen our belts now!

    I continue to be beyond impressed and more so with each development. Wow.

    I am even considering a trip from California to attend the opening. And the food sounds as yummy as the German food my grandmother used to make.


    Please give a yell so we can catch up.
