RECIPE: Sweet & Savory Roasted Nuts

Need a quick, easy and downright delicious snack for your next bottle share event or beer gathering? Nuts and craft beer make a perfect pair! Here’s our recipe for great herb-roasted mixed nuts.

Herb-Roasted Mixed Nuts 

Herb-Roasted Mixed NutsIngredients:
• 1 lb. unsalted mixed nuts (any combination)
• 1 Tbsp. finely chopped fresh rosemary (do not use dried)
• 1 tsp. dried oregano leaves
• 1/2 tsp. cayenne pepper
• 3 Tbsp. brown sugar
• 1 Tbsp. sugar
• 2 tsp. kosher salt
• 1/8 tsp. black pepper
• 1/3 cup unsalted butter, melted

Preparation:
Preheat oven to 375 degrees F. Spread the nuts on a baking sheet and toast in the oven on the middle rack until they are light golden brown and fragrant, about 12 minutes, turning halfway through.

In a large saucepan, combine the rosemary, oregano, cayenne, brown sugar, sugar, salt, pepper and melted butter. Stir together over medium-low heat for 1-2 minutes until combined. Be careful not to let the sugar caramelize at the bottom of the plan. Add the toasted nuts; cook and stir constantly over medium heat for another few minutes to coat and glaze the nuts. Spread coated nuts on a foil-lined baking sheet and let cool. Break apart any large chunks and serve. Store in an airtight container for up to 1 week. Enjoy with your favorite beer or topped on ice cream. Yields 3 cups.
